Fool's Buttermilk
- Cook Time: 10-12 minutes (but you just stir & wait)

- Ingredients
- 1 cup lactose-free milk
- 1 tablespoon apple cider vinegar or lemon juice
- Instructions
- Stir vinegar or lemon juice into lactose-free milk. Wait 10-12 minutes, or until milk has thickened slightly and can lightly coat a spoon and sides of a glass – see my pictures below for reference. Use immediately in any recipe calling for buttermilk!

This is a great all-purpose, quick buttermilk subsititute for popping into any baked good you would normally use buttermilk in! I’m a huge buttermilk-in-baked-goods fan, so coming across this technique from FODMAP Everyday was a game changer for me.
